First, place the sharpening steel vertically, ideally, on a flat surface. Then hold the
knife by the handle. Make sure that you are holding it firmly. See to it that the tip of the blade is
pointing upwards.

Start sharpening by moving the blade from the back wide part of the knife or the bolster
to the point. Make sure that you are holding the angle at least 20 degrees. Apply slight pressure on the
steel.
